Veggie Chili


  • 2 tablespoons olive oil
  • 1 small chopped onion
  • 1 chopped red pepper
  • 2 cloves minced garlic
  • 1/2 pound ground meat cooked, or a couple chicken breasts cooked and chopped into chunks, or 1/2 bag of soy crumbles (optional)
  • 1 large (29 oz) can diced tomatoes (the ones with the mild green chiles are great)
  • 1 large (29 oz) can black beans
  • 1 large (29 oz) can red kidney beans
  • 1 (15 oz) can garbanzo beans
  • 1 bag (16 oz) frozen corn
  • 1/4 – 1/2 cup of your favorite BBQ sauce and/or hot sauce (optional)
  • 1/4 cup of your favorite salsa
  • 1 tablespoon chili powder
  • salt, pepper, crushed red pepper, cumin – any seasoning to taste


  1. In a large pot saute the onion, red pepper and garlic in olive oil.
  2. If you want to add meat or veggie crumbles, add it now.
  3. Add the chili powder and any other spices.
  4. Add the salsa and all other ingredients.
  5. Cook and serve when hot, or you can put it all together in the crockpot and let it simmer for as long as you like.
