Royal Icing

INGREDIENTS for piping:

2 cups confectioners’ sugar
4 teaspoons meringue powder
3 tablespoons warm water
1 tablespoon freshly-squeezed lemon juice

INGREDIENTS for flooding:

2 cups confectioners’ sugar
4 teaspoons meringue powder
6 tablespoons warm water
1 tablespoon freshly-squeezed lemon juice

DIRECTIONS:

Combine all of the ingredients in the bowl of your stand mixer. Beat on high for 5 minutes.For piping icing will look like white glue, for flooding icing will look like soup, very runny.

Icing that is not being immediately used must be stored in an air-tight container.
